Happy Pancake Day! One of my favourite days of the year. Pancakes are something I only ever have on special occassions so they’re a welcome treat. When I saw this recipe from Tesco for chocolate pancakes, I just had to give them a go. I thought they were a nice twist on the original pancake (although I’ll be having them too for dessert tonight!). I altered the recipe slightly and changed the topping to create these beauties:Now after all that indulgence, I guess I should be thinking about giving something up for Lent. For the pancakes
100g plain flour
15g cocoa powder
1 egg yolk
1 tbsp vegetable oil
250ml full fat milk
For the toppings
1 scoop vanilla ice cream
A few handfuls of frozen mixed berries
In a large bowl, sift together the flour and cocoa.
Add in the egg and egg yolk with the oil and mix.
Gradually whisk in the milk until the mix is smooth.
Heat the pan with a little oil and pour the batter in to the pan. (About 3 tbsp per pancake). Cook for a few minutes until the pancake comes loose easily. Then flip and repeat on the other side.
Serve the pancakes with berries and ice and enjoy! X
